This is my most useful cookie recipe, to be exact this is the one recipe that I make the most. ever.
Well, the obvious question is why? I`ll tell you- this recipe is easy to make, and takes no time. Every time I make it everybody (and I do mean everybody) loves it , and the most important- this recipe always turn out great.
If you plan to try this one, please pay attention to one thing- the oven temperature. Please don`t be tempted to bake it a higher temperature. It would simply mess the final result.

180 gr. butter, melted
1 cup (240 gr.) light brown sugar
1\2 cup (100 gr.) sugar
1 tablespoon coffee powder
1 teaspoon vanilla extract
2 1\4 cups (320 gr.) flour
1\2 teaspoon salt
1\2 teaspoon baking soda
200 gr. white chocolate, coarsely chopped
2 cups (100 gr.) walnuts or pecans, very coarsely chopped
Preheat oven to 160 degrees C.
In a bowl, mix melted butter, light brown sugar, sugar, egg, yolk, coffee and vanilla until mixture is evenly combined.
In a separate bowl, sift together the flour, salt and baking soda. Add the flour mixture to the butter mixture together with the white chocolate and the nuts. Mix Until combined (do not over mix).
In wet hand, form a 3-4 cm. balls of dough. Place the balls on an lined oven baking pan, and bake in the preheatde oven for 15-17minute, or until the cookies are lightly golden and a firm in the sides. Coll on a wire rack and keep in an airtight container up to a week.Naama
